VeganMoFo 2011: Livin' it up at Costco 1.0


Hello, again!
I made these burritos using stuff I got at Costco here in Tijuana.
Actually, I got the hummus at another Costco (in Ensenada), but they sell it here as well.

-Organic firm tofu
-Hummus with sunflower seeds and paprika
-Uncooked flour tortillas
-Soy sauce (Gallon jug!)
-Dried minced onions




First, I pressed the tofu really quick, cubed it and stir fried it with some cooking spray.
Then I made a marinade with soy sauce, garlic salt, liquid smoke, dried onions and water.
I poured this mix over the tofu and cooked it until there was no liquid left.

I spread some hummus on my cooked tortillas, added the tofu, sriracha sauce and rolled them up.

This is a super simple example of the things you can find at big places like Costco.
I think it's one of the friendliest places to get vegan food down here!

    I haven't been to Costco yet but a friend of mine goes and she buys me lots of vegan things!

  2. Those burritos look so yummy! And I love that you're livin' it up at Costco. I drool over that place, too. Getting excited about buying in bulk probably indicates some kind of sickness, but I'm not apologizing to anyone :)

  4. Your fried tofu looks so good! I haven't had tofu in a while (no one's fault but my own) and now I'm craving some.
